Pour 8 oz. of freshly boiled water over four teaspoons of tea in a cup or a teapot. Cover and steep for 10 minutes or to your taste. For increased flavor and potency, steep longer. Strain using a tea strainer and enjoy hot or cold, with or without your favorite sweetener. Drink 6 cups daily. Alternatively, prepare a big batch daily in a saucepan using 1/2 cup of tea in 6 cups of boiling water. Prepare as above and refrigerate. Remove and reheat a cup at a time.
German Chamomile has been used as a traditional medicine and tea for thousands of years; valued for its calming properties. Today, it is included in approximately 26 national pharmacopeias, worldwide. Traditionally used in herbal medicine as a calmative and/or sleep aid and for the digestive system.
The use of Fennel dates back to the ancient Romans and Greeks. It originates from the Mediterranean but has been a traditional herbal medicine in China and Europe. The seeds are commonly chewed after a meal in India to promote good digestion and to freshen up the breath. In the west, Fennel is used primarily as a tea to ease infants during their colicky first weeks. It is sometimes administered to the infants directly or may be drunk by the nursing mother. Recent published studies support this traditional use.
Belonging to the mint family, Lemon Balm makes a wonderfully refreshing tea. Traditionally used in herbal medicine as a calmative and/or sleep aid and for the digestive system. This gentle herb is often used in gripe water formulas.
