Elderberry is found throughout Europe, Asia, North Africa, and has been naturalized in the United States. The tree has been called "the medicine chest of the common people," as the flowers, leaves, berries, bark and roots have all been used in traditional folk medicine for centuries.
Elderberry was used by Native Americans in seasonal winter remedies to support the immune system. Elderberries are concentrated sources of anthocyanins, potent purple pigments that appear to benefit health in a number of ways. At the Bundesforschungsanstalt Research Center for Food in Germany, scientific studies showed that Elderberry's anthocyanins enhance immune function by boosting the production of cytokines (proteins). These unique cytokines act as messengers in the immune system, and help to regulate immune response.
Elderberry's total antioxidant capacity is one of the highest of all the small fruits. In fact, it has a much higher antioxidant potential than cranberry and blueberry!
