Hawthorn Vinegar
Vinegar was once a very popular condiment that was commonly used for the purpose of preserving and extracting medicinal herbs. It has been replaced by alcohol, as the taste is more acceptable to most palates. However, for a change of pace try making an herbal vinegar. Hawthorn makes a very tart and fruity vinegar.
Ingredients
- ½ pint of dried Hawthorn berry
- 1 pint (16 oz) of organic vinegar such as apple cider
Directions- Add the berries to a clean glass jar- 24 oz or larger
- Add the cider to the jar and shake thoroughly
- Cover and leave to macerate in a cool dark place. Shake daily
- After 3 weeks, strain off the berries and return the vinegar to a clean jar.
- The vinegar will keep for a year. Use in your favorite salad dressings or recipes as you would use normal vinegar.
