Ginger Spiced Cranberry Sauce

This sauce gives an extra zest to ordinary cranberry sauce, without being overpowering.

Ingredients

  • 1 lb of cranberries
  • 1 cup of sugar
  • 2/3 cup of orange juice
  • 2/3 cup of water
  • 1 tbspn grated orange peel
  • 1 tspn of ground ginger
  • 1/3 cup of crystallized ginger
Directions
  1. Combine all ingredients except for the crystallized ginger in a saucepan.
  2. Bring to the boil, stirring to dissolve the sugar.
  3. Simmer until the cranberries pop- about 5 minutes.
  4. Cool and add the crystallized ginger.
  5. Cover and refrigerate.
  6. Can be prepared 2 days ahead of meal.
