Ginger Spiced Cranberry Sauce
This sauce gives an extra zest to ordinary cranberry sauce, without being overpowering.
Ingredients
- 1 lb of cranberries
- 1 cup of sugar
- 2/3 cup of orange juice
- 2/3 cup of water
- 1 tbspn grated orange peel
- 1 tspn of ground ginger
- 1/3 cup of crystallized ginger
Directions- Combine all ingredients except for the crystallized ginger in a saucepan.
- Bring to the boil, stirring to dissolve the sugar.
- Simmer until the cranberries pop- about 5 minutes.
- Cool and add the crystallized ginger.
- Cover and refrigerate.
- Can be prepared 2 days ahead of meal.
